I had an idea that I would post about some yummy and healthy recipes that I’ve come across. While you were sleeping in, I went over to Bed Bath and Beyond and bought a crock pot. I’ve been wanting a crock pot for a looooong time but until recently, I didn’t have the kitchen space for it. I bought it and immediately looked for something to cook.

What’s cool about this soup is that it’s vegetarian! And also because it has sweet potatoes because who doesn’t love sweet potatoes? Here’s some healthy facts about the ingredients of this soup:
sweet potatoes- They’re very high in vitamin B6 and D which help prevent heart attacks and give your immune system a boost.
lentils- chock FULL of soluble fiber that really help lowering cholesterol. They’re also a great source of protein.
carrots- rich in beta-carotene, carrots really help your liver and like the old saying ‘good for your eyes’!
green beans- Personally, green beans are probably my favorite vegetable. I will eat them in ANY form. Beans also have alot of calcium and fiber which benefit metabolism. Great for anyone who is active!
On to the recipe…
4 large carrots, chopped
4 stalks celery, chopped
1 onion, diced
2 large sweet potatoes, cubed
1.5 cups green beans, chopped
2 cups green lentils (be sure to rinse)
1 tsp minced fresh rosemary
1 bay leaf
1 tsp dried oregano
4 cloves garlic, minced
1 15oz can of diced tomatoes
64oz of vegetable broth
2 tsp, salt
1/2 tsp pepper
Combine all ingredients, cover and cook for 10 hours on low. Add a little more broth if it is too thick.
It’s a very healthy tasting soup. Be sure to really let it cook for the full 10 hours.
